I'm not one for following recipes and in this one, I substitute the tofu for Haloumi for myself, partly because tofu doesn't agree with me and partly because I prefer Haloumi.

INGREDIENTS

2 tsp finely grated lemon rind

1 tsp dried oregano leaves

2 tbsp fresh lemon juice

2 tsp extra virgin olive oil

300g firm tofu or haloumi, drained

2 large corncobs, husks and silk removed
-
1 head (about 300g) broccoli
-
1 tbsp basil pesto
-
100g baby rocket
-
250g mixed cherry tomatoes

2 tbsp shaved parmesan
METHOD

Prep everything:
- Finely grate the lemon rind
- Cut the tofu/haloumi into 1cm squares
- Cut the broccoli into small florets
- Halve the cherry tomatoes

Combine the lemon rind, oregano, 1 tbs lemon juice and 1 tsp olive oil in a small bowl. Brush the oregano mixture evenly over the sliced tofu

Heat a frying pan over high heat. Lightly spray the corn with oil

Cook the corn for 8 minutes, turning, or until tender. Remove from pan

Cook tofu or haloumi for 1-2 minutes each side or until lightly browned
- Steam broccoli over salted boiling water for 3-4 minutes or until tender

Meanwhile, whisk the pesto, remaining 1 tbs lemon juice and 1 tsp olive oil in a small bowl until combined

Cut the corn cobs into 1.5cm-thick rounds

Combine the corn, rocket, tomato and asparagus in a bowl

Divide among serving plates or place on a large platter

Top with the tofu or haloumi and drizzle with the pesto dressing

Serve sprinkled with parmesan
