Healthy-ish Fried Rice with Eggs

Quick & Easy Dinner

This is based on a recipe from Taste but I've changed a few of the ingredients to suit my (and Keeley's!) tastes.

I like to sprinkle some chopped chillies or chilli sauce on the top of my rice for a bit of extra zing.

INGREDIENTS

  • 2 tsp Sesame Oil
  • 2 eggs
  • 1 large carrot
  • 6 spring onions – 4 for main cook, 2 for garnish
  • 1 head (about 300g) broccoli
  • 150g snow peas
  • 100g baby spinach
  • 1 large red capsicum
  • 3 cups brown rice
  • 2 tbsp soy sauce
  • 1 tsp fish sauce

METHOD

  1. Cook the rice as per the instructions. Add 1 tbsp oil or butter to the cooking water, along with salt.
  2. Prep the vegetables:
    1. Carrots – cut into matchsticks
    2. Spring onions -thinly slice
    3. Broccoli – thinly slice the stalks, cut head into small florets
    4. Snow Peas – cut into thirds
    5. Baby spinach – chop
    6. Red capsicum – deseed and finely chop
  3. Lightly whisk the eggs
  4. Lightly spray a large wok with oil. Heat over medium heat.
  5. Add half the egg and cook for 30 seconds then swirl to coat the base. Cook for a further 30 seconds. Gently loosen the edge of the omelette and transfer to a chopping board. Repeat with remaining egg.
  6. Roll up omelette and thinly slice.
  7. Increase heat to high. Add the sesame oil, carrot and shallot to the wok. Stir-fry for 1 minute.
  8. Add the broccoli , snow peas , spinach and capsicum . Stir-fry for 2 minutes or until tender crisp.
  9. Add the rice , soy sauce and fish sauce . Stir-fry until well combined and heated through.
  10. Add half the omelette and stir until combined.
  11. Divide the fried rice among serving bowls.
  12. Top with the remaining omelette and extra shallot to serve. Sprinkle with chillies or chilli sauce for a bit of extra heat.
